LABO 12th Event Report
The Komedori LABO workshop was held on Wednesday, July 23, 2025.
Komedori LABO is a fan community that was launched on the occasion of our store's first anniversary to further promote Komedoriming in the second year and beyond.
The members of Komedori LABO are involved in developing seasonal amazake (sweet sake) to be offered in store, and come up with ideas for product development, working together with us with the same passion as our store staff.
This will be the 12th time the event is being held, and a "Sweet Sake Making Workshop" will be held.
We invited not only Komedori LABO members but also regular customers of our store, and the event was held with a total of three people.
This workshop will be held in the morning for the first time at LABO.
Up until now, we have mainly focused on making seasonings and miso, but we have finally tried our hand at making amazake for the first time.
The menu included a special "black sesame amazake" that will be served next time. The preparation, surrounded by the fragrant aroma, was a truly refreshing experience.
The prepared amazake is aged in an insulated tumbler for about 8 hours.
It was a heartwarming moment where a sense of attachment naturally grew, as if to say, "I made it myself."

In this relaxed atmosphere, we talked about fermentation and koji.
We were also able to share themes and ideas that we would like to try at LABO in the future, and had a very fulfilling morning.
Komedreaming will continue to work with LABO members to discuss the appeal of koji and fermentation, and spread the appeal of Japan.

The next event will be held on the first Sunday of August, August 3rd, and will involve making miso.
