LABO 17th Event Report
The Komedori LABO workshop was held on Wednesday, December 17th.
The last one of 2025! This will be the 17th time we have held this event, and it will be the extremely popular "Miso Making Workshop."
Komedori LABO is a fan community that was launched to further promote the future of Komedori Dreaming on the occasion of the first anniversary of the store's opening in March 2023. Komedori LABO members are involved in the development of seasonal amazake (sweet sake) to be served in store, come up with ideas for product development, and work together with the store staff with the same passion.
This time, 17 people, including LABO members, tried their hand at making miso.
By the way, did you know that winter has long been the best season for making miso?
Miso can be made all year round, but winter is the coldest time of the year, which inhibits the growth of bacteria and slows fermentation, resulting in a rich flavor. The way the finished product changes depending on the temperature and environment is one of the fun things about making it by hand.
This time, we will be making luxurious miso using fresh koji from Yamaguchi Kojiten, a long-established store that has been in business for over 150 years, and soybeans from Hokkaido.
Many people participated as families, and some had previously participated in LABO's miso-making. They had a lively discussion about their impressions of the previous miso and other miso-related topics, and eager customers asked many questions, making it a miso-making experience that made fermentation feel more familiar.
We would like to thank all participants for their participation and active cooperation.

With the winter season approaching, we also recommend bulk purchasing of dried koji, which is ideal for making winter miso, amazake, and koji seasonings.
