How do you develop seasonal amazake?

I am a sales and development staff member at Komedreaming.
Komedreaming is a sweet sake cafe and general goods store where you can enjoy sweet sake either as takeaway or in the store.
They also put a lot of thought into their menu, with a wide variety available, from the classic rice koji amazake to green juice amazake and roasted green tea amazake.
We also offer a seasonal menu that is limited to each month.
Last year, our lemon amazake and black sesame amazake were very well received.
The newly released HACCO CACAO is also a seasonal product that began life as such.
These seasonal menus are actually developed jointly by the recipe development staff and Yamaguchi Kojiten.
We start by researching seasonal vegetables and fruits, consulting with them to see if they are compatible with fermentation, and having them make prototypes. We then adjust the sugar content, taste, etc. to get closer to our sensibility.
Furthermore, our matcha and roasted green tea are carefully sourced and paired with koji amazake.
Now in our second year, we are not only reviving some of the popular dishes from the first year, but also trying out some new dishes.
