How do you develop seasonal amazake?

Hello!

I am a sales and development staff member at Komedreaming.

Komedreaming is a shop that combines an amazake cafe and general goods store, where you can enjoy amazake either as takeout or in the shop.

The menu is also carefully crafted, with a wide variety available, from the classic rice koji amazake to green juice amazake and roasted green tea amazake.

We also offer a seasonal menu that is limited to each month.

Last year, our lemon amazake and black sesame amazake were well received.

The newly released HACCO CACAO was also originally a seasonal product.

These seasonal menus were actually developed in collaboration with the recipe development staff and Yamaguchi Kojiten.

We start by researching seasonal vegetables and fruits, discussing whether they are compatible with fermentation, having them create a prototype, and adjusting the sugar content and taste to bring the product closer to completion.

Furthermore, our matcha and roasted green tea are carefully selected from their respective regions and paired with koji amazake.

This year, in our second year, we are not only reviving the popular menu items from the first year, but also trying out new dishes.
