LABO 13th Event Report
The Komedori LABO workshop was held on Sunday, August 3, 2025.
Komedori LABO is a fan community that was launched on the occasion of our store's first anniversary to further promote Komedoriming in the second year and beyond.
The members of Komedori LABO are involved in developing seasonal amazake (sweet sake) to be offered in store, and come up with ideas for product development, working together with us with the same passion as our store staff.
This will be the 13th time the event is being held, and a "Miso Making Experience Workshop" will be held.
We not only invited Komedori LABO members, but also regular customers of our store, and three people participated.

In this basic miso-making experience using soybeans, rice koji, and salt, participants will learn the traditional way of making miso, and discover that there are various types of miso in each region.
The participants had the opportunity to experience making their own miso while thinking about the ingenuity behind the miso-making process that Japanese people have continued to use, such as "why do we make it into dumplings when packing it into containers?"
After making miso, it needs to be aged, so imagine the finished product while you make it.
To make the miso smoother, he uses his entire body weight to carefully crush the soybeans.
It was so beautiful that I was blown out the air, and at the end I wrote the date of creation myself,
Everyone was immersed in making miso and had a great time.
LABO members who have already met will be able to talk with each other and exchange ideas on how to use delicious koji.
We learned a lot and had a very enjoyable and meaningful time.
Komedreaming will continue to work with LABO members to discuss the appeal of koji and fermentation, and spread the appeal of Japan.

The next tomato koji making event is scheduled for the evening of August 20th.
