[Event Report] On October 21st, our representative, Naomi Shimabukuro, gave a lecture at Minato Ward Eco Plaza.

On Tuesday, October 21, 2025, Naomi Shimabukuro, CEO of Komedreaming, gave a lecture at the Minato Ward Eco Plaza, an environmental learning facility in Hamamatsucho, Minato Ward, entitled "Eco-Friendly Food, Clothing, and Shelter - Drinks Edition - Fermentation and More That is Friendly to Both People and the Environment." (Reference: Minato Ward Eco Plaza )

Overview of the lecture

The theme of this course is "Drinks/Fermentation."
The content considers environmentally friendly living from the perspective of fermentation.

・What is fermentation?
-Is fermentation eco-friendly?
・"Small (fermentation) eco" you can do today
・"Normal in Japan" as seen from the world

We talked mainly about topics such as:

During the lecture, there will also be a tasting of our original sweet sake, " HACCO CACAO ."

Through the taste, we were able to experience "fermentation as a lifestyle choice."


What participants said

Eighteen people living in Minato Ward participated on the day, and we received many positive comments in the questionnaire after the event.

"I can't believe it can be sweetened with just koji without adding sugar!" "I learned about the different types of koji for the first time." "After learning about the wonders of koji, I want to try making various kinds myself."

"I learned about the power of fermentation and its relationship to ecology." We received many comments of discovery and surprise, such as, "I learned the big picture of incorporating koji into our daily lives, including food, clothing, and shelter."

Furthermore, we received many warm comments about the instructor, Shimabukuro himself, such as, "His love and passion for koji was conveyed," "I was impressed by his wide range of knowledge," and "The instructor's first-hand experiences made fermentation a real-life experience."

I am truly happy that Shimabukuro's thoughts and experiences about fermentation allowed people to experience the appeal of koji up close.


Conclusion: What we want to convey

Through this lecture, I was reminded that fermentation is a kind choice that can be made in daily life.

We cherish the Japanese tradition of fermentation and hope to spread its appeal from Daimon to the local area and the world.
