LABO 16th Event Report
On Wednesday, November 19, 2025, the Komedori LABO workshop "Making Ponzu Koji" was held.
Komedori LABO is a fan community that was launched to further promote the future of Komedori Dreaming on the occasion of the first anniversary of the store's opening in March 2023. Komedori LABO members are involved in the development of seasonal amazake (sweet sake) to be served in store, come up with ideas for product development, and work together with the store staff with the same passion.
This was the 16th time we held the event, and we held a Ponzu Koji Making Workshop.
We spoke to LABO members and regular customers of our restaurant, and together with five people, we took on the challenge of creating a seasoning using fresh, seasonal yuzu that would be perfect for hot pot dishes in the cold winter months.
The fresh yuzu had a wonderful aroma, and while making ponzu koji using the juice and peel, there was lively conversation about koji seasonings and how to use koji, creating a friendly and lively atmosphere. Some participants had participated in making other koji seasonings in previous workshops, and it was clear that koji is becoming more familiar to people, and that the circle of people using it is gradually expanding.
Komedreaming will continue to work with LABO members to spread the appeal of Japan.

The next miso-making workshop is scheduled to be held on Wednesday, December 17th.
